Ingredients
FOR THE PEACH FILLING
1-16 oz. package of frozen peaches
1 tsp. vanilla extract
4 tsp. granulated sugar
4 Tbsp. packed light brown sugar
1/2 tsp. ground nutmeg
1/4 tsp. ground cinnamon
FOR THE HONEY GREEK YOGURT
6 Tbsp. heavy whipping cream
1 cup plain Greek yogurt
2 Tbsp. honey
1/2 cup of granola, complementary flavor; divided into fourths
FOR THE TOPPING
16 - 20 pieces of Foster's Cinnamon Candied Pecans, chopped
Sprinkling of additional granola (optional)
Preparation
1. Prepare the peach filling: Place the frozen peaches in a large microwave-safe bowl. Defrost for 1-minute and 30-seconds, then chop the peaches into 1-inch, bite-sized chunks. Add the vanilla extract and stir thoroughly. In a separate small bowl, mix the remaining ingredients together, then pour the mixture over the peaches. Stir until the filling is well combined and evenly coated. Refrigerate for 30–45 minutes.
2. Make the honey yogurt: Using a medium mixing bowl and an electric mixer, whip the heavy cream until stiff peaks form (about 10 minutes). Add the yogurt and honey, then blend until smooth and fully incorporated. Refrigerate until ready to use.
3. Prepare the topping, by chopping the Cinnamon Candied Pecans into 1/4” bite-sized pieces. Set aside until final assembly.
4. Assemble the parfaits: Spoon a layer of yogurt into the bottom of each serving glass, followed by a layer of spiced peach filling and granola (using all of the granola in single layers per parfait). Finish with another layer of yogurt and peach filling, then top with the chopped candied pecans and an optional sprinkling of granola. Serve immediately or refrigerate until ready to serve.
