About the Recipe

Chicken pizza is a healthier option to the traditional meat pizza & pairing it with whole wheat pizza dough enhances its nutritional value even better. Tender pieces of grilled chicken, smoky barbecue sauce, melted cheese, and crisp red onions come together atop a wholesome crust, creating a mouthwatering medley of flavors.

Ingredients

PIZZA PAN PREPARATION

Olive or cooking oil to grease pizza pan  

Approximately 1-1/2 Tbsp. cornmeal  

 

WHEAT PIZZA DOUGH    

1 pouch of Foster’s Whole Wheat Bread Mix 

Approximately 6 oz. of very hot water

1-1/2 Tablespoons of olive oil

 

PIZZA TOPPINGS

1-1/2 cups sweet & spicy or smoky bar-b-que sauce

8 oz. grilled & seasoned chicken breast

(cubed into bite-sized pieces)

1 cup sliced pepperoncini peppers

1 cup chopped red onion

2 cups of Colby-Jack & mozzarella cheese

1/2 cup chopped fresh cilantro

 

2Tbsps. garlic butter, Italian herbs & cheese

(optional for basting the crust)

Preparation


1.  Prepare a 13 - 14” pizza pan, by lightly greasing with cooking oil and  dusting with yellow cornmeal; Set pizza pan aside.


2. Prepare Wheat Bread Mix according to directions on pouch using hot water and olive oil. Make a dough ball and allow to rise for 45-minutes or until doubled in size. Punch down dough ball and deposit on a lightly-oiled plastic wrap or baking mat lined surface. Using a rolling pin or lightly-oiled hands, flatten dough to 1/8” thickness to the size of the pizza pan (dough will bake to 2X thickness). Lift plastic wrap or baking mat and transfer dough to pan.  Stretch dough to edges of pan and create a lip around the rim.  Stipple the surface of the dough with the tines of a fork and brush with olive oil. Preheat oven to 475°F and prebake crust for 5 to 6 minutes; allow to cool before applying toppings.


3. Prepare the pizza toppings and spread 1 cup of bar-b-que sauce on crust. Use 1/2 cup of sauce to coat chicken chunks. Top crust with chicken, pepperoncini peppers & red onion.  Top with cheese.


4. Bake at 475°F for 12-15 minutes. Immediately top with cilantro and baste the outer edge of crust with garlic butter, herbs & extra cheese. Pop pizza back into the oven for 1-2 minutes to melt cheese.  Serve immediately.
