1.  For the Butter Filling, mix the ingredients in a small bowl and set aside.  Prepare the Old Fashioned White Bread Mix according to the package directions, up to step 3.

2.  Roll dough ball into a 13-inch wide circle on the lightly floured work surface. Spread all but two tablespoons of the butter filling over the circle, leaving a 1/2-inch border around the edges.

3.  Using a pizza cutter, cut the circle into 8 large wedges.

4.  Lift the wide edge of each wedge and gently widen it.  Begin rolling from the wide end to the tip; lifting slightly off the surface as you roll, stretching and elongating the roll at the same time.

5. Place each roll tip-side down, shaped like a crescent on the baking sheet. Let rise in a warm, humid place (110–125°F) for 45 to 60 minutes, or until doubled in size.

6.  Prepare the Egg Yolk Glaze by whisking  ingredients in a small bowl.  Set aside until step 8.

7. Preheat the oven to 425°F. Place the rolls in the oven and immediately reduce the temperature to 375°F. Bake for 6 minutes.

8. Remove rolls briefly and brush with the egg yolk glaze & sprinkle with your choice of desired topping. Return the rolls to the oven and bake for another 6 to 8 minutes, or until golden brown.  Before serving, brush the rolls with the remaining butter filling for extra flavor and shine.
